Lenten Lentil Soup

Admittedly, I was hesitant at first - it looked kinda frothy and unappealing.

But trust me!  If you hang in there, it becomes something yummy and delicious and oh-so-very appetizing!

Combine in a large pot
  • 2 cups lentils (green/brown/red)
  • 4 cups cold water
  • 1 tbsp salt
  • 1/4 tsp pepper
  • 1/2 cup butter or margarine
  • 1 large can tomatoes
  • 1 large white onion, diced
  • 2 tbsp fresh dill
  • 2 cloves garlic, crushed
  • 2 large bay leaves

Slowly bring contents to a boil over medium heat.  Cover and simmer over low-heat for 2 1/2 - 3 hours.

Quick, easy, super tasty and very lenten friendly!
